
I recently started a 30-day beef, butter, bacon & egg (BBBE) challenge to help break a weight loss stall. I wanted to make a high-fat, fast, and easy carnivore meal that was a bit more interesting than just steak or ground beef. So, this recipe was born!
Cooking the beef and bacon first allows the eggs to soak up all that rich, flavorful fat. If you’re like me and find it hard to eat rendered ground beef fat on its own, this method makes it way more enjoyable. Plus, nothing goes to waste.
Why I Love This Meal
I’m currently living in a hotel room, and I can easily cook this meal in my electric skillet. If you’re working with a limited kitchen (or just low on motivation), this is one of the easiest and most satisfying carnivore meals you can throw together.

In addition, I’ve found that keeping things ultra-simple with high-fat carnivore staples (like beef, butter, bacon, and eggs) works best for my body and my PCOS. I particularly like this recipe because:
- It supports steady energy
- It keeps me full and satisfied for hours
- It takes less than 30 minutes to make
- It feels like comfort food, without compromising my goals
- It’s a little more interesting than just plain ground beef or eggs
- It can be served to non-carnivores too (just put in a tortilla or serve over toast, etc.)

Bacon & Egg Beef Scramble Recipe
The number of servings depends on how hungry you are (or how many people you’re feeding). Using the ingredients listed below, this makes 3-4 meals for me. You can easily half or double the recipe, depending on how much you want to make.

Ingredients:
- 1 lb ground beef (80/20 or fattier)
- 4 slices bacon
- 6 large eggs
- 2 tablespoons butter, plus extra to serve
- Optional: Salt of your choice
Instructions:
- Cook the bacon in a skillet until crispy. Chop into pieces and set aside. Leave the bacon grease in the pan.
- Add butter to the skillet and let it melt into the bacon fat.
- Add the ground beef and cook until browned, breaking it up into small pieces as it cooks.
- Meanwhile, crack the eggs in a bowl and scramble them well. Add salt, if desired.
- Once the beef is cooked, add the eggs and scramble everything together in the pan.
- Stir in the chopped bacon, then remove from heat.
- Finish with salt to taste and an extra pat of butter on top before serving (if desired).

Tips & Variations
For meal prep, this recipe reheats nicely. You can easily make a double batch and portion into containers. Store in the refrigerator. I wouldn’t freeze it due to the eggs.
For added texture, let the beef crisp up before stirring in the eggs. It adds a few minutes to the cooking time, but it’s worth it!
If you eat cheese, this meal is delicious topped with aged cheddar and/or parmesan. Sour cream is also a nice addition. If you eat spices, a little chili powder or cayenne pepper adds a nice kick.
